Cake for Mother's Day – Tart with mascarpone cheese and fruit

Cake:

• 250 g of wheat flour
• 100 g of powdered sugar
• 150 g butter or margarine
• 2 egg yolks
• a spoonful of cold water

Cream:

• 500 g of mascarpone cheese
• 5 tablespoons of powdered sugar
• 1 teaspoon of vanilla extract
• ½ cup of cream 30 %, chilled
• 500g fruit (preferably strawberries)

Knead the ingredients for the dough in a bowl and put it in the fridge for at least half an hour. Roll out the dough on a floured surface to a thickness of approx. 3 mm. Line the tart pan and press it carefully to the edges. Trim the edges of the cake protruding from the pan. Prick the entire dough with a fork and put it back in the fridge for half an hour. Preheat the oven to 180 degrees and bake for about 30 minutes.

Mix the mascarpone cheese with sugar and vanilla extract. Whip the cream until stiff and add it to the cheese. Cover the bottom of the tart with cream and decorate with fruit.
