After Fat Thursday, we suggest eating something lighter. How about a salad with healthy barley groats, plums and radicchio? Here is the recipe:

Ingredients
• 1 head of radicchio
• 170 g of barley – e.g. Wiejska Spiżarnia brand
• 12 California plums
• 2 tablespoons olive oil
• 1 tablespoon of sunflower seed oil – e.g. Organic Look Food sunflower seed oil
• 1 tablespoon of honey
• 150 g of feta cheese
• a handful of arugula
• pinch of salt

Preparation:

Cook the barley with water, proportions 1:1. Add 2 California plums to the boiling barley, they will give the barley an interesting color and plum flavor. Cook over low heat for 30-40 minutes. Leave the pot with the barley covered until it cools down.

Preheat the oven to 170 degrees. Wash and dry the radicchio. Cut into smaller pieces, place in a dish, pour olive oil and honey over it, mix thoroughly and place on a baking tray covered with baking paper. Place the tray in the preheated oven for approx. 10-12 minutes. The radicchio should be slightly toasted.

Cut the dried California plums into strips. Cut the feta cheese into small pieces.
Place the cooled barley into a bowl, add radicchio, California plums, arugula and chopped feta cheese. Mix the ingredients, if necessary, pour sunflower seed oil, add honey or salt
