Barbecue season is in full swing. The grills are usually dominated by various sausages. While the sausages are frying, offer your friends an original salad. This is a must-try dish for vegetarians as well. It's worth surprising them with something other than chopped cucumber and tomato. We have some inspiration for you: grilled halloumi cheese with watermelon and capers in breadcrumbs.

Ingredients:
750g watermelon, seedless and cut into cubes
2 small shallots, finely chopped
oil
white balsamic vinegar
300g halloumi, cut into larger rectangles
lemon juice
pepper
salt

Breadcrumbs for capers:
75 g of dry bread without crusts, ground into breadcrumbs
1-2 cloves of garlic pressed through a press
half of finely chopped red chilli
2.5 tablespoons of capers
50g blanched almonds, toasted and chopped
a small bunch of mint

Execution:
– Mix the chopped watermelon and shallot in a bowl, add 4 tablespoons of olive oil and balsamic vinegar, and fresh pepper. Cover the whole thing and put it in the fridge for half an hour.
– Heat the oil in a pan and fry the breadcrumbs until golden. Add the garlic, chili and capers and fry for another minute, then add the almonds. After removing from the heat, add a few torn mint leaves.
– Brush the halloumi with olive oil and place it in a heated pan so that it melts slightly, leaving a golden trace. Place the hot cheese on the previously prepared salad, sprinkle with capers in breadcrumbs and a pinch of salt. Serve immediately![:]
