Ingredients:
1 cup of flour
1/3 cup crushed vanilla wafers
1 tablespoon of sugar
2 spoons of baking powder
1/4 teaspoon of salt
1 egg
2 tablespoons melted butter
1 ripe banana, blended
1/2 teaspoon of vanilla extract
1 1/4 cups of milk
Vegetable oil for frying
Vanilla and custard filling:
2 tablespoons of cornstarch
1/2 cup of sugar
pinch of salt
2 yolks
1 cup of a mixture of half and half milk and cream
1 cup of milk
1 teaspoon of vanilla extract
1 banana, thinly sliced
1 cup of whipped cream
1/2 cup crushed vanilla wafers
Execution:
In a medium bowl, mix flour, crushed vanilla wafers, sugar, baking powder and salt.
In another bowl, combine the egg, melted butter, mashed banana, vanilla extract and milk. Add to the bowl with the dried ingredients and mix until combined.
Heat the oil in a pan and leave over medium heat. Pour the pancake batter onto it (1/4 cup for one pancake). When it turns golden brown, turn it over to the other side.
In a small saucepan, combine the cornstarch, 1/2 cup sugar and a pinch of salt. Beat 2 egg yolks, cream combined with milk and 1 cup of milk. Heat slowly, stirring constantly. Cook for 1 minute, stir, remove from heat. Then add banana slices.
Before serving, fill the pancakes with the filling, cover with whipped cream and sprinkle with vanilla crumbs.
