Cheesecake is a cake that almost always appears on the Easter table. There are many cheesecake recipes. Here's a suggestion for an easy and delicious cheesecake based on pudding.
Ingredients for cheesecake
• 6 eggs
• 200 g butter
• 125 grams of sugar
• 2 vanilla puddings – e.g. Emix brand
• zest of 1 lemon
• 1 kg of white ground cheese (in a bucket) – e.g. Włoszczowa brand
• 250 g mascarpone
• pinch of salt
• powdered sugar for sprinkling – e.g. Diamant brand
How to do it:
1. Separate the yolks from the whites
2. Cream the butter and sugar until fluffy
3. Add 2 pudding packages, lemon zest and mix everything
4. Add the yolks and mix everything
5. Add cottage cheese and mascarpone cheese using a spoon
6. Beat the egg whites until stiff, adding a pinch of salt
7. Add the beaten egg whites to the mixture and mix gently
8. Pour the cheese mixture into the springform pan
9. Place the cake tin in an oven preheated to 220 °C for 15 minutes
10. After 15 min. reduce the temperature to 120 °C and bake for 2 hours
11. After baking, do not remove the cheesecake from the oven, just open the oven door and wait until the oven shows a temperature of approximately 60 °C. Then remove the cake from the oven and set aside to cool completely.
12. Once it has cooled down, put the cheesecake in the fridge overnight
13. The next day, decorate it according to your taste and sprinkle with powdered sugar.
