Meringue:
• 6 proteins
• A glass of sugar
Cream:
• 2 egg yolks
• 2 packages of mascarpone
• 1 tablespoon of sugar
• 3 tablespoons of cream 36%
• Raspberry jam – for example Babuni Jam by Stovit
• Summer fruits: raspberries, strawberries, blueberries
• Mint for decoration

EXECUTION:
How to make meringue:
1. Preheat the oven to 160°C
2. Beat the egg whites until stiff and shiny. Gradually add sugar while beating.
3. Draw a circle on baking paper. Spread the meringue inside the circle, creating a crater: the sides are slightly higher than the center.
4. Place the meringue in the oven and bake for 10 minutes. Reduce the temperature to 140°C. Bake for 60 minutes, then turn off the oven and let the meringue cool completely in the oven.

How to make the mass:
1. Beat the yolks with sugar, add mascarpone cheese and mix
2. In a large bowl, beat the cream until stiff. Mix with the mascarpone mixture.
3. Put it in the fridge for a while to cool it down

Last step – connection:
1. Gently pour the mixture and raspberry jam onto the meringue
2. Decorate with fruit. Choose a few small mint leaves and decorate the top of the dessert with them
3. Serve immediately - Pavlova dessert tastes best the day it is made
