Easy to make cheesecake

One of Polish Easter cakes is cheesecake made with twaróg, which resembles cottage cheese or ricotta. There are many recipes for cheesecake. Here is a suggestion for an easy and delicious cheesecake based on pudding.

• 6 eggs
• Butter – 200 grams
• Sugar – 125 grams
• 2 vanilla puddings – eg. Emix brand
• 1 lemon peel
• Cheese (twaróg) – 1 kg – eg. Wloszczowa brand
• Mascarpone – 250 grams
• Pinch of salt
• Icing sugar for decoration – eg. Diamant brand


1. Separate the yolks from the whites
2. Blend butter with sugar. Mix everything thoroughly
3. Add 2 packages of pudding, lemon peel and stir it together
4. Add egg yolks and blend
5. Add in small portions cheese and mascarpone cheese using a spoon and mix
6. In a separate bowl, whisk the egg whites to stiff peaks, adding a pinch of salt
7. Add stiff to a mass and blend gently
8. Pour the mixture into the mold
9. Put the form in the oven preheated to 220 °C and bake for 15 minutes.
10. After 15 minutes. reduce the temperature to 120 °C and bake for 2 hours
11. After baking, don’t remove the cheesecake from the oven, just open the oven door and wait for the oven to show a temperature of apporx. 60 °C. Then remove the cake from the oven and let the cake to cool completely.
12. After cooling, put the cheesecake in the fridge overnight
13. Next day decorate it according to your taste and sprinkle with powdered sugar.
